Dubai’s dining scene is no stranger to spectacle, but this April, the culinary spotlight beams from 51 floors above the Palm, where SUSHISAMBA Dubai welcomes Peruvian virtuoso Chef Diego Muñoz for a bold gastronomic residency that promises to captivate palates and imaginations alike.
Best known for taking Astrid y Gastón to the very top of Latin America’s 50 Best, and more recently making waves from Lima to Lisbon and Miami, Muñoz is the kind of chef who doesn’t just cook—he creates worlds. For two nights only, 23rd and 24th April, his Peru-meets-the-world style arrives in Dubai with a selection of six à la carte dishes seamlessly integrated into SUSHISAMBA’s vibrant menu. Then, on the 24th, something rarer still: an exclusive four-hands Omakase-style dinner alongside SUSHISAMBA’s Brand Chef Kitak Lee, hosted in the restaurant’s golden-hued Private Dining Room with just 12 seats.

A Journey to the Unexpected
Muñoz’s food tells stories. Raised in Peru, he draws inspiration from the country’s rich culinary roots and its lesser-known native ingredients—those often passed down through generations. His plates are expressive, layered, and rooted in honesty. Think Hirame Tiradito sharpened with citrus and heat, or Grilled Prawn lacquered in rocoto butter that hits like a bright chord in a coastal song.
He’s not here to dazzle with excess. He’s here to remind us that restraint, heritage, and surprise are not mutually exclusive. That food can evoke memory as much as it feeds desire.
The Omakase: Where Cultures Collide
The jewel in the crown is the 12-course Omakase experience, staged in a space that feels more art installation than private dining room. Lit by a bamboo chandelier and bathed in views of Ain Dubai and the Palm Jumeirah, the room itself whispers exclusivity.
